Helping with dinner

So I was trying to make dinner, a new recipe, last night and Irie was sitting on the counter watching me. Then she decided that she would "Help". I had bell peppers one of each color that I was getting ready to cut up and she picked up each one and tried to eat it like an apple.


And then as I got them cut into strips she picked up a strip of each color and chewed on it.
This one is my favorite pic of them all.

So dinner turned out really good and it was really quick and easy so I thought I would share the recipe. It is one of those that can be thrown together and you could use different kinds of veggies. Here you go ENJOY!!!!

Simple Sweet 'N Sour Meatball Simmer

12 oz frozen meatballs
1 package (16 oz) frozen stir-fry vegetables (sliced green yellow and red peppers and white onions)
1/4 cup apricot jam
1/4 cup Catalina Dressing
2 Tbsp. soy sause

COMBINE all ingredients in large skillet
COOK on medium-high 10 min or until meatballs and vegetables are heated through, stirring occasionally.
SERVE over hot rice, pasta, or mashed potatoes. If Desired

JAZZ IT UP For extra flavor add 1/2 tps. each ground ginger and garlic powder to the sauce while cooking.

I didn't get the right stir-fry mix so as you an see I just cut up fresh peppers. But Carson said it would be good with broccoli and carrots, or I think just about any of the stir-fry mixes. Hope you like it as much as I did.
